WELLNESS CULINARY PROGRAM

LEVEL 1

Become a Culinary Wellness Professional, CWP.

BCA is designed for anyone who is interested in learning how to up their game and knowledge in the kitchen! It’s a bonus for the wellness professional to enhance their knowledge, but is also priceless for someone who wants to be a PRO at treating themselves well!

  • This course is full of incredible recipes that incorporate many of the healthiest foods on the planet! You will be personally guided throughout each module to ensure that you are well synced with the material and moving through the course successfully.
  • Upon completion of the program, everyone earns a Culinary Wellness Professional, CWP Certificate from BCA.
  • The course is comprised of 12 in-depth modules, each containing easy-to-follow lessons, assignments and quizzes. As each module is completed, the next module is unlocked for you. You will be able to access the course materials for one year.
  • We encourage you to do your very best to keep up and try to set aside some time each week for your studies and coursework.
  • The BCA philosophy focuses on vegan and gluten-free nutrition. However, there are a few (3 of 45+) recipes that include an egg, ghee, and yes one for collagen-rich bone broth.
  • We are here to help you build a healthy kitchen. Items like a high-speed blender and food processor are essential.
  • In order to receive and earn your Certificate as a Culinary Wellness Professional, CWP from BCA, you will need to pass all quizzes, assignments, and the final exam.
  • Note: A food dehydrator is highly recommended and used in 3 of the recipes.

WHAT'S INSIDE

The course consists of 12 modules. One module will be opened up per week over the course of 12 weeks. You can easily finish the course within this time, depending on your schedule. You will have lifetime access, for as long as BCA exists,  to complete the course and earn your certificate as a Culinary Wellness Professional.

WHAT YOU'LL LEARN IN EACH MODULE

MODULE 1

Getting Organized in the Kitchen

Whether you are brand new to the basics of cooking or you have an idea of what to do but need to brush up on the little details, like which knives to use for what, you’ll learn all of that with us in this module. We’ll go over how to store things properly and determine a reasonable shelf-life so that you can always have the freshest ingredients on hand.

MODULE 2

Nutrition Basics

Did you know that the heat produced by a blender can kill off the vitamins and nutrients that you hope to get from a smoothie or health drink? In this portion of the course we’ll brush up on the difference between macro and micronutrients, along with how their values change when cooked versus consumed raw.

MODULE 3

Superfoods

You’ve probably heard of superfoods, but do you know what they really are or how to use them? If not, pay close attention as we cover superfoods like Raw Cacao and Goji. We’ll be demonstrating seven incredibly healthy recipes that are also extremely flavorful, unlike others you may have tried in the past that have turned out to be boring and bland.

MODULE 4

Raw Food I

Knowing how to prep raw meals is important for your gut health and offers other benefits, like a glowing complexion. While enveloping our senses in tantalizing flavor is an enjoyable part of cooking, eating raw meals or juicing regularly can help to reduce internal toxicity and oxidation. You don’t have to eat raw 100% percent of the time, but incorporating raw food as a regular part of your diet routine is essential.

MODULE 5

Raw Food II

Do you enjoy sundried tomatoes, raisins, figs, or apricots? If so, how do you want to prepare them at home? We’re going deeper into the world of home-sprouting and dehydrating in this module, so get ready to enjoy some delicious dried fruits!

MODULE 6

Minerals and Micronutrients

How much do you really know about your nutrition? Step up your game by including seaweed, specific types of mushrooms, and turmeric to reduce harmful oxidation to your cells caused by free radicals.

MODULE 7

Inflammation

When you find yourself experiencing heartburn, joint pain, and back discomfort on a regular basis, don’t ignore it. Your body is trying to tell you something, which is why we dedicated this portion of the course to cruciferous veggies. This includes Brussels sprouts, cauliflower, cabbage, and other dark green or otherwise bulbous foods. You might find these plants unappetizing, but when prepared properly, they’re an amazing and delicious addition to your meals.

MODULE 8

Fermented Foods

Don’t let the name put you off –– these foods are probiotic-rich and help to restore gut health. Just because a food is fermented doesn’t mean that you’ll be chomping into a rotten veggie. If you think about it, wine is just fermented grapes. We’re giving you 3 lessons on recipes that aren’t wine, but that Are just as yummy and far more healthy!

MODULE 9

Insulin & Sugar

Do you ever find yourself crashing after drinking a caffeinated pick-me-up? In this section we’ll talk about your Glycemic Index and the impact it makes on your Endocrine System. Excessive sugar and carbohydrates can wreak havoc on the body, so how do we reduce them?

MODULE 10

Vegan Protein

One of the first questions people ask about veganism is where they should be getting their protein from. We give you a list of ingredients that can be added to any vegan meal. We’ve got some mouthwatering options for you!

MODULE 11

Greens, Salads, Vinaigrettes

Salad goes great with just about anything, but you should maximize your leafy greens if you’re as serious about your health as you are about a tasty meal. In this session we’ll teach you about microgreens, and why you should use them as an alternative to your typical iceberg salad. Afterward, create your own dressings with our delicious and simple vinaigrette recipes!

MODULE 12

Sweet Treats

You’ve made it through the first 11 courses, so we hope you have room for one more! What meal is complete without the satisfying warmth of dessert after a good meal? You can have a sweet treat that isn’t packed with unhealthy corn syrup and loaded with sugar. To close out this course, we’re offering our most delicious recipes to satisfy your sweet tooth!

MEET MIA

​It was early 2013 when I was diagnosed with breast cancer– at the age of 42. After recovering from a double mastectomy, I was determined to do everything in my power to stack the odds in my favor.

So I went back to school for an education in nutrition and wellness. While becoming certified in Plant-Based Nutrition at eCornell University, I committed to juicing, eliminating certain foods, and crafting meals with ingredients touted for their restorative and cancer-fighting properties. Goji berries, cacao, pitaya, cashews became staples in my kitchen.

Along the way, something happened. Somehow I lost 24 pounds without even trying. I ate more than ever before, loving what I was eating, and excess weight was melting away. At the same time, I had plenty of energy, I slept well, my bowel movements were regular, and my skin glowed. I felt like I had discovered the fountain of youth!

Everything began to matter to me. Food, friends, helping others, cooking, photography, technology, and health came together as if by Kismet and became the next stage of my life.

I studied Raw Food Nutrition with David Wolfe and the Matthew Kenny Academy, and became a Raw Food Certified Chef. I am educated as a Reiki Master and Holistic Wellness Counselor, and these diverse perspectives have given me an entirely new outlook on food. I am here to share all of this wisdom and love with you. It is truly my pleasure.
